Ever hear of it? They are an excellent appetizer for your next barbecue. These are a proven winner, I've made them alot and most people love 'em. It's a half a jalapeno stuffed with cream cheese and a lil smokey sausage wrapped with bacon. For a dozen it requires:
6 large jalapeno peppers
8 oz cream cheese
12 Lil Smokey sausages
6 strips of bacon, cut in half. (so you have 12 pieces)
12 toothpicks
Your smoker or oven needs to be preheated to about 300 degrees. Slice the jalapenos in half lengthwise and remove the seeds and membrane (the hot parts) and leave the stem on (just slice through it) to maintain the integrity of the pepper. Fill the cavity with cream cheese. Place 1 smokey on top Wrap one of the 1/2 slices of bacon around it, hold it in place with a toothpick. Place them in the smoker for 1 hour, using minimal smoke, hickory is good. These are really good, and not overly spicy. I highly recommend them.
